I made this salsa when trying to make my husbands fabulous salsa, and realized I didn't have all the ingredients, I improvised, and came up with this version which is delicious. Ingredients:
1 (28 ounce) can tomatoes |
2 chipotle chiles (canned in adobo) |
3 jalapenos (de-seeded and diced finely) |
1/2 small yellow onion (diced) |
2 garlic cloves (finely diced) |
2/3 cup cilantro (chopped, packed loosely) |
1/4 teaspoon chili powder (try ancho chile powder too) |
1/4 teaspoon cumin |
1/2 lime, juice of |
1/2 teaspoon white vinegar |
Directions:
1. Blend the tomatoes, chipotles and 1 of the jalepenos in a food processor. Pulse till blended. 2. Transfer to a bowl and stir in the remaining ingredients. 3. Add salt to taste, stir and enjoy! |
