Manchego cheese is a Spanish cheese derived from sheep's milk. It's creamy white in color and smooth in texture, and it has a deliciously nutty flavor that pairs well with the chipotle-raspberry dressing in these wraps. Ingredients:
1/4 cup whole-berry cranberry sauce |
1 chipotle chile, canned in adobo sauce |
1 tablespoon light raspberry-walnut vinaigrette (such as ken's steak house) |
1/2 pound thinly sliced deli turkey |
1 cup gourmet salad greens |
1/2 cup (2 ounces) shredded manchego cheese or provolone cheese |
1/4 cup thinly sliced and halved red onion |
4 (8-inch) low-fat flour tortillas (such as mission 96% fat-free heart healthy) |
Directions:
1. Process first 3 ingredients in a food processor until mixture is blended and smooth. 2. Arrange turkey and next 3 ingredients evenly down center of each tortilla. Top evenly with chipotle sauce, and roll up. Chill until ready to serve. If desired, cut in half diagonally before serving. |
