Chipotle Corn Salad By Big Daddy |

Big Daddy made this today on his show, I made it this afternoon for dinner. Fabulous sweet corn, spicy chipotle, zippy lime, crunchy red peppers all tossed into a salad to compliment any meal. Enjoy...we just did. Ingredients:
8 ears of corn, cut off cob - use grilled corn if you can, if its not grilled, give it a quick saute in a pan to carmelize it a little & to give it some color |
3 small green onions, sliced well into the green |
3 tablespoons cilantro, fresh, chopped |
1/2 red bell pepper, diced |
1/2 purple onion, diced (didn't have this so i just used spanish onion) |
1 tablespoon minced garlic |
2 chipotle chile canned in adobo, diced with some of the sauce, too |
1 lime, juiced - fresh, of course |
2 tablespoons olive oil |
salt and pepper, to taste |
Directions:
1. Mix all ingredients together a couple of hours ahead of serving time to let the flavor develop. Serve at room temp. |
