Very different, very peppery, very zesty, very savory slaw. Great with grilled pork chops. Hope you enjoy as much as we do. Ingredients:
3 chipotle chilies |
1 garlic clove |
1 cup mayonnaise |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1 tablespoon fresh lemon juice |
1/2 cabbage coarsely shredded |
Directions:
1. If using dried chipotles soak in hot water until softened. 2. Using a mortar and pestle or food processor mash or puree chilies with garlic clove. 3. Blend into mayonnaise then stir mixture into shredded cabbage. 4. Season with salt, pepper and lemon juice then refrigerate until ready to serve. |
