Chipotle Chicken Wraps
Ingredients:
1 chipotle pepper, rehydrated, stemmed and seeded
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 cloves garlic, peeled
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 tsp olive oil
4 breast of chicken, boneless, halved about 4 to 6 oz each
1/2 cup fat-free, whipped cream cheese
2 tbsp sweet onion, minced
4 flour tortillas, 10 in
4 lettuce leaves, shredded
Directions:
1. For the chipotle chicken:
2. 1. Combine the chipotle pepper, herbs, garlic, salt and pepper
3. in a mortar and pestle or chop them on a cutting board until
4. they form a paste. Add the olive oil to the mortar and pestle
5. or transfer the mixture to a small bowl and add the olive oil.
6. 2. Rub the chicken breasts with the chipotle paste and set aside.
7. 3. Preheat the grill or broiler.
8. 4. Cook the chicken for about 4 to 6 minutes per side, until it
9. is cooked through. Transfer the chicken to a cutting board to
10. let cool, then cut the chicken into small pieces.
11. For the wraps:
12. 5. In a small bowl, combine the cream cheese and onions. Add
13. salt and pepper to taste.
14. 6. Lay out the flour tortillas on a work surface in front of
15. you. Divide the cream cheese among the tortillas, spreading
16. it out in the center of each tortilla. Divide the chicken and
17. the lettuce among the tortillas. Tightly wrap each tortilla
18. into a cylinder ending with the seam side down.
19. 7. Cut each wrap on the diagonal and serve.
