Chipotle Chicken Wraps Ingredients:
1 chipotle pepper, rehydrated, stemmed and seeded |
1/4 cup fresh parsley |
1/4 cup fresh cilantro |
2 cloves garlic, peeled |
1/2 tsp salt |
1/2 tsp freshly ground black pepper |
1 tsp olive oil |
4 breast of chicken, boneless, halved about 4 to 6 oz each |
1/2 cup fat-free, whipped cream cheese |
2 tbsp sweet onion, minced |
4 flour tortillas, 10 in |
4 lettuce leaves, shredded |
Directions:
1. For the chipotle chicken: 2. 1. Combine the chipotle pepper, herbs, garlic, salt and pepper 3. in a mortar and pestle or chop them on a cutting board until 4. they form a paste. Add the olive oil to the mortar and pestle 5. or transfer the mixture to a small bowl and add the olive oil. 6. 2. Rub the chicken breasts with the chipotle paste and set aside. 7. 3. Preheat the grill or broiler. 8. 4. Cook the chicken for about 4 to 6 minutes per side, until it 9. is cooked through. Transfer the chicken to a cutting board to 10. let cool, then cut the chicken into small pieces. 11. For the wraps: 12. 5. In a small bowl, combine the cream cheese and onions.
