I love potatoes...There is so much one can do with them..This is a great way to serve mashed next to that big fat juicy rib eye you just took off the grill...Can be made ahead of time and put in a foil container to heat up on the grill while the steaks are cooking. 1 head garlic |
olive oil to coat garlic |
2 1/2-3 lb. russet potatoes, peeled, cut into 1-inch pieces |
1 cup white cheddar cheese, grated and packed |
2 oz. cream cheese, room temp |
2 tbls. butter, room temperature |
1 tsp. chipotles, canned and finely chopped |
heat oven to 350 degrees f. |
Directions:
1. Preheat oven to 350 2. Cut garlic top off and put on piece of foil. 3. Coat top with olive oil 4. Wrap up in foil and bake 45 minutes 5. Cool, squeeze out garlic and chop. 6. Cook potatoes in large pot of boiling salted water until tender 7. Drain potatoes and put in large bowl 8. Add rest of ingredients 9. Using potato masher, mix ingredients until all mixed together 10. Serve |
