This is from Canadian Living Posting for safe keeping. Times are approximate and the serving size is for use as an appetizer. A fun and blisteringly hot take on a grilled cheese sandwich . Would make a great appetizer for football or hockey season Ingredients:
1/4 cup tomato paste |
1 chipotle pepper |
1 teaspoon adobo sauce |
2 green onions, chopped |
16 slices cheddar cheese bread or 16 slices white bread, crusts removed |
8 thin slices cheddar cheese (about 6 oz/175 g) |
1/4 cup butter, softened |
Directions:
1. In blender or mini food processor, purée together tomato paste, chipotle pepper, abodo sauce and green onions. 2. (Make-ahead: Refrigerate in airtight container for up to 2 days.). 3. Spread scant teaspoonful (5 mL) tomato mixture over each slice of bread. Top half with cheese; top with remaining bread slices, tomato side down. Spread butter on tops and bottoms. (Make-ahead: Cover and refrigerate for up to 3 hours.). 4. Arrange sandwiches on large rimmed baking sheet. 5. Broil, turning once, until golden and crisp, about 4 minutes. 6. Cut lengthwise into 1-inch (2.5 cm) wide sticks. |
