Chipotle-Black Bean Chili |

Chipotle chiles frequently come packaged in adobo sauce (a Mexican-type red sauce) and can be very hot. They're usually found in the Mexican section of your supermarket. Substitute 1/4 teaspoon of ground pepper for the chipotle, if desired. Ingredients:
1 teaspoon olive oil |
1 cup finely chopped onion |
6 garlic cloves, minced |
2 tablespoons chili powder |
1 teaspoon minced drained canned chipotle chile in adobo sauce |
1/4 teaspoon pepper |
1/8 teaspoon salt |
2 (15-ounce) cans black beans, drained |
2 (14.5-ounce) cans no-salt-added whole tomatoes, undrained and chopped |
1 (4.5-ounce) can chopped green chiles, drained |
cilantro sprigs (optional) |
Directions:
1. Heat oil in a large saucepan over medium-high heat. Add onion and garlic; sauté 3 minutes or until tender. Add chili powder and next 6 ingredients (chili powder through green chiles); bring to a boil. Reduce heat, and simmer 15 minutes. Ladle chili into individual bowls, and garnish with cilantro sprigs, if desired. |
