Chipotle-black Bean Chili |

From Cooking Light's Soups and Stews Cookbook. This vegetarian chili recipe is moderately spicy. The chipotle chiles give it a slightly smoky flavor. Ingredients:
1 t. olive oil |
1 c. finely chopped onions |
6 cloves garlic, minced |
2 t. chili powder |
1 t. minced drained canned chipotle chiles in adobo sauce |
1/4 t. pepper |
1/8 t. salt |
2 15 oz. cans black beans, drained |
2 14.5 oz. cans no salt added whole tomatoes, undrained and chopped |
1 4.5 oz can chopped green chiles, drained |
cilantro sprigs, optional |
Directions:
1. Heat oil in a large saucepan over medium high heat. 2. Add onion and garlic; saute 3 minutes or until tender. 3. Add chili powder and next 6 ingredients; bring to a boil. 4. Reduce heat; simmer 15 minutes. 5. Ladle chili into individual bowls; garnish with ciantro if desired. |
