1. /4 cup chopped sweet onion 2. /4 cup chopped green pepper 3. jalapeno pepper, seeded and minced 4. chipotle pepper in adobo sauce, minced 5. tablespoons olive oil 6. cups seeded chopped tomatoes 7. tablespoon chipotle hot pepper sauce 8. teaspoons sugar 9. teaspoon salt 10. teaspoon chili powder 11. /2 teaspoon ground cumin 12. tablespoons minced fresh cilantro 13. teaspoon Liquid Smoke, optional 14. beef tenderloin steaks (1-1/2 inches thick and 6 ounces each) 15. teaspoons steak seasoning 16. Directions 17. In a Dutch oven, saute the onion, green pepper, jalapeno and chipotle pepper in oil until tender. Add the tomatoes, pepper sauce, sugar, salt, chili powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened, stirring frequently. 18. Remove from the heat; stir in cilantro and Liquid Smoke if desired. 19. Meanwhile, sprinkle steaks with steak seasoning. Grill, over medium heat for 7-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°; well-done, 170°). Serve with sauce. |
