Makes a great burrito or tostadas! Perfect with a fresh salsa and you can adjust the heat to suit you by the amount of chipotle peppers you use. Ingredients:
1 1/2 lb boneless beef round steak or a small roast |
1 14oz. can of diced tomatoes |
1 med. red onion, diced |
2 canned chipotle peppers in adobo sauce, chopped |
1-2 tsp oregano |
1 clove minced garlic |
dash of salt |
dash of cumin |
Directions:
1. Trim fat from meat and set in your crock pot with all ingredients. 2. Cook on low for 8-10 hours or high for 4-5 hours. 3. Remove meat and shred with 2 forks. 4. Stir in reserved juices - enough to moisten or make saucy. |
