I found this recipe in the diabetes and you magazine it said its from betty crocker kitchen. This is going to be made tonight with my chili for dinner LOL. with my alterations of course.
Ingredients:
1 cup fiber one original bran cereal
1 cup cornmeal
1 cup all-purposed flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp chili powder
1 1/4 buttermilk
1/4 cup barbecue sauce
2 tbsp finel chopped canned chipotle chiles in adobo sauce
2 tbsp vegetable oil
1 egg
Directions:
1. Heat oven to 400 degrees.
2. Spray 8 inch square pan with cooking spray
3. In large bowl, stir together cereal, cornmeal, flour, baking powder, baking soda, salt, and chili powder; set aside
4. In medium bowl, stir together remaining ingredients.
5. Stir into cereal mixture and pour into pan.
6. Bake 25 to 28 minutes or until golden brown.
7. Serve warm
