Ingredients:
3 cups peanut oil |
1 cup raw shelled peanuts |
salt |
freshly ground black pepper |
Directions:
1. Heat the oil in a heavy skillet. When the oil is hot, add the peanuts and fry for 5 to 7 minutes, stirring constantly. Drain. In a food processor, fitted with a metal blade, puree the peanuts and 2 tablespoons of the oil until smooth. Season with salt and pepper. Remove and cool |
