Chinese Stir Fry Vegetable |

Taken from Periplus Cookbook Hidangan Lazat Cina .. I added a little twist of my own Ingredients:
1 bunch of green chinese leaves (bok choy,choy sum or kailan ) |
(blanch for 1 minute,and drain) |
8 pieces of black dried chinese mushrooms (boil until the mushroom is soft) |
2 tablespoon vegetable oil |
2 tbsp oyster sauce |
salt to taste (you don't really need it because of the oyster sauce and dried shrimp) |
2 red chillies (cut diagonally) |
dried shrimps (the small ones) |
Directions:
1. Wash and clean the greens . Separate the stem from the leaf , cut them together into small pieces.(The size like you usually see in the Chinese restaurant). Blanch the greens , for 1 minute , then drain. 2. Remove the mushroom stem ,boil until soft , then squeeze the water out. 3. Heat the wok , with medium heat. Pour in the oil , and throw in the dried shrimps and stir until you can smell , the dried shrimp aroma . 4. Then add in the greens and mushroom , stir until the vegetables and oil is well incorporated . 5. Seconds before turning off the heat , add the oyster sauce and mix well . Season with some salt if necessary . 6. Dish out , garnish the vegetable with red chillies |
