A tasty healty soup, easy to make and sooooo awesome on a cold/rainy day! My usually fussy toddler also loves it! Ingredients:
5 cups of water |
1 pack frozen spinach or 1 bunch of fresh spinach |
1 organic chicken/ vegetable soup cube |
4 cloves chopped garlic |
1 tbs sesame oil |
1 tbs soy sauce |
1 tsp rice wine vineger |
1 sp chopped ginger |
chopped cilantro leaves - 3-4 stems |
1/2 pack of chopped mushrooms (i use either shiitake or cremini mushrooms) |
1 package of firm tofu - cut into small pieces |
salt and pepper to taste |
Directions:
1. Boil the water and add all ingredients except the mushrooms and tofu. Let it cook on low hear for about 30 minutes. Let it cool down a bit and then use a hand mixee to blend the soup. Heat the soup again for another 10 minutes and then add mushroom and tofu. If you like it a little spicy...top it with a pinch of chilly flakes. |
