Very different, very unique and very tasty. Great brunch or breakfast dish for special guests. Enjoy Ingredients:
1/2 pound shrimp peeled and deveined |
1 teaspoon sherry |
1/2 teaspoon cornstarch |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 tablespoons vegetable oil |
6 eggs lightly beaten |
chopped cilantro to garnish |
Directions:
1. Combine shrimp, sherry, cornstarch, salt and pepper in a small bowl and toss to combine. 2. Marinate for 10 minutes. 3. Heat the vegetable oil in a skillet over moderate heat and sauté shrimp for 3 minutes. 4. Add eggs and cook stirring frequently. 5. Sprinkle with cilantro. |
