One that our kids still demand when they come home from college! Just good old-fashioned comfort food, with a bit of a Chinese twist. Ingredients:
2 tablespoons oil |
2 lbs lean beef, cut into strips |
1 onion, chopped |
2 garlic cloves, crushed |
2 slices ginger |
1/2 cup soy sauce |
2 tablespoons brown sugar |
1/8 teaspoon pepper |
3 cups water |
Directions:
1. Heat oil in Dutch Oven. Fry beef until brown. Add onions, garlic and ginger. Stir-Fry a few minutes. Add Soy Sauce, brown sugar, pepper and water. Bring to a boil. Reduce heat, cover and simmer for 3 hours. Add more liquid, if needed. Just before serving, thicken with a small amount of flour or corn starch. Serve over rice or noodles. 2. OPTIONAL: 30 minutes before serving, add 1/2 lb of vegetables. Mushrooms, green pepper, carrots and peas all work well. |
