I made this a day ahead to take to school for lunch the next day. Very easy to make and yummy! Ingredients:
1 medium potato (cubed or cut into chunks) |
1 stick celery |
1 carrot |
1 scallions (white part - cut into 5cm) |
dressing |
1.5 tbsp rice vinegar |
1/2 tbsp light soya sauce |
1 tsp dark soya sauce |
1 tsp sesame oil |
1/4 tsp sugar (brown or white) |
1/2 tsp chilli paste |
1/2 tsp garlic paste |
Directions:
1. Note: The prep time includes chilling time. 2. ~~~~~~~~~ 3. Mix the dressing together and refridgerate. 4. Boil potatoes in salt water for about 10 mins. 5. In the meantime, slice celery and carrot in circles. 6. When potatoes are tender in the centre, drain and rinse with cold water then let it stand in room temperature (or refridgerate to chill quicker). 7. Once cool, mix together sliced celery, carrots, potatoes, scallions & dressing. Stir until well coated and serve. |
