Chinese Noodle Salad Pea Salad |

I got this from my best friends sister, years ago. When I have to bring a salad somewhere, this is the one I take. Ingredients:
dressing |
1/2 cup mayonaise (not miracle whip) |
2-3 tsp. fresh ginger root, peeled and grated. |
1/2 tsp. garlic powder |
1/2 tsp. dry mustard |
1 tsp. soy sauce |
salad |
1- 8 oz. can water chestnuts, chopped |
4 sliced green onions |
1 stalk thinly sliced celery |
1- 10 oz. pkg. frozen peas - thawed and drained |
topping |
1 - 5 oz. can crisp chinese noodles. |
Directions:
1. When mixing the dressing, make sure that the ginger root is very finely grated. Mix all ingredients together. 2. Place salad ingredients in a bowl and mix with dressing, cover and chill for several hours. 3. When ready to serve, toss in Chinese noodles or use like croutons on each plate. |
