This is a nice refreshing salad to have alongside a spicy entree. Ingredients:
3 cucumbers |
1 teaspoon salt |
3 tablespoons soy sauce |
2 cups rice wine vinegar |
1 tablespoon sugar |
1 teaspoon sesame oil |
2 tablespoons scallions, finely chopped |
1 tablespoon fresh gingerroot, finely chopped |
Directions:
1. Peel cucumbers. 2. Slice thinly. 3. Mix remaining ingredients and pour over cucumbers. 4. Stir carefully. 5. Chill. |
