This is an attempt to come up with an easy yet healthy version of a asian soup - this was my first attempt to create it and I think it came out pretty good Ingredients:
1 cup celery (diced) |
1/2 cup onion (diced) |
1/2 cup carrot (julienned) |
1 cup cabbage (nappa or savoy shredded) |
1 cup bean sprouts |
1 cup pea pods (cleaned and sliced in half) |
1/2 cup mushrooms (sliced) |
2 cups chopped chicken meat |
6 cups chicken stock |
1 tsp ginger (minced) |
1 tbsp garlic (sliced thin) |
1/2 - 1 tsp asian five spice |
1 tsp tamari sauce |
1/2 tsp sesame oil |
1/4 tsp chili oil |
salt and pepper to taste |
Directions:
1. 1.In a soup pot add 1 tbsp olive oil add the 1st 7 ingredients and sauté for 5-10 minutes, add chicken stock. 2. 2.Add spices and cook for 10 minutes, add chopped chicken and simmer for 15 minutes. |
