Directions:
1. Combine in a large bowl: 2. 4c thin strips cooked chicken 3. 1 11oz. can mandarin oranges,drained and juice reserved 4. 2/3c sliced scallions 5. 1/2c chopped roasted peanuts 6. Whisk together: 7. about 2/3c reserved orange juice 8. 1/2c peanut oil 9. 2 Tbs fresh lemon juice 10. 11/2 tsp chili oil,or to taste 11. 1 tsp soy sauce 12. 1 tsp minced peeled fresh ginger 13. 1/2 tsp salt or to taste 14. 1/4 tsp ground Szechuan peppercorns oe black pepper 15. Pour 2/3c dressing over the chicken mixture and toss to combine. Taste and adjust seasoning. 16. Serve the salad over: 17. 4c shredded Napa cabbage 18. Top with: 19. 1c chow mein noodles |
