This recipe is from Once-A-Month Cooking by Mimi Wilson and Mary Beth Lagerborg. I'm adding it here so that I can plan my recipe list and shopping list for once-a-month cooking! Prep and cooking time are estimates, as I haven't made this yet. Ingredients:
1 1/2 lbs chicken breasts, boneless, skinless |
1/2 cup lemon juice |
1/4 cup soy sauce |
1/4 cup dijon mustard |
2 teaspoons vegetable oil |
1/4 teaspoon cayenne pepper |
1 cup long-grain rice, uncooked |
Directions:
1. Cut chicken breasts into 1-inch cubes. Mix lemon juice, soy sauce, mustard, oil, and cayenne pepper. Put marinade and chicken in a 1-gallon bag and freeze. 2. To prepare, thaw chicken and remove from marinade. Bring marinade to a boil in a small saucepan. 3. Spray broiler pan with nonstick spray and place cubed chicken on the pan, with pieces about 1 inch apart. 4. Broil 4 to 5 inches from heat for about 7 minutes, brushing with marinade once. 5. Turn cubed chicken and broil another 4 minutes. 6. While chicken is cooking, prepare rice according to package directions. 7. Suggested sides: Lentil salad. |
