This is another old recipe my mom used to make. I think she got it from a magazine. Unlike most chinese chews , there are no dates or chow mein noodles in this cookie. Alternately, I have cut these into squares while still slightly warm, and rolled them in icing sugar. Ingredients:
2 cups sifted flour |
1/2 teaspoon salt |
4 ounces candied orange peel, finely chopped |
4 ounces candied lemon peel, finely chopped |
2 cups walnuts, coarsely chopped |
4 eggs |
1 teaspoon vanilla |
1 lb dark brown sugar |
icing sugar |
Directions:
1. Preheat oven to 350*. Mix flour, salt, both candied peels and walnuts in a bowl. 2. Beat eggs and vanilla in another bowl, with electric mixer until foamy. Add the brown sugar and keep beating until thick and creamy. Stir in the flour-fruit-nut mixture & combine. 3. Pour into a lightly greased 9 x 13 pan. Bake 350* for 45-50 minutes. Cool and sprinkle with icing sugar. Cut into bars or squares. |
