Chinese Beef Stir Fry in Oyster Sauce |

This is the authentic way to stir fry, the Chinese way... Ingredients:
1 lb lean beef sirloin, pounded |
15 pieces green onions, cut to 1-inch long |
15 slices ginger, julienned |
1/2 lb snow peas or 1/2 lb broccoli |
1/2 teaspoon baking soda |
1 teaspoon sugar |
1 tablespoon cornstarch |
1 tablespoon soy sauce |
3 tablespoons water |
2 tablespoons peanut oil |
2 tablespoons oyster sauce, lee kum kee brand |
1 tablespoon water |
1 teaspoon sugar |
1/2 teaspoon cornstarch |
1/2 teaspoon sesame oil |
1/2 tablespoon rice wine |
1/2 teaspoon salt |
1 teaspoon sugar |
2 tablespoons oil |
Directions:
1. Slice beef thinly into 1 inch square. Put in a bowl and marinate for 1 hour. 2. Heat wok and add 1 T oil, stir fry vegetable until crisp tender. 3. Pour in seasoning sauce for veg, blend well and arrange vegetable on plate. 4. Heat wok again and stir fry beef in 4 T oil till light brown, set aside. 5. In the same wok, stir fry ginger and green onions. 6. Add beef stir quickly then add the seasoning sauce. 7. Stir until thickened and heated through. 8. Pour over vegetable and serve with rice. |
