There are many variations to the humble Chinese Almond Cookie. Some regions top it with an almond, others a peanut, others a date... Either way, I sometimes crave for these delicate treats. Here's my simple recipe Ingredients:
1 c shortening at room temperature |
1/2 c white sugar |
1/2 c brown sugar |
1 large egg |
1 tbsp almond extract |
2 1/4 c all purpose flour |
1/4 tsp salt |
11/2 tsp baking powder |
1 egg yolk |
2 tbs water |
Directions:
1. Cream lard with white and brown sugar until mixture is fluffy. 2. Add egg and almond extract. Blend well. 3. Sift flour, salt and baking powder. 4. Add flour mixture to cream mixture. Blend well. 5. Take a tablespoon of the mixture and roll into a ball and place on cookie sheets at least 2 inches apart. 6. Mix egg yolk and water. Brush the top of each cookie and press an almond or your favourite nut on top. 7. Preheat oven at 350 and baked for 10 to 12 minutes until golden. |
