Chimichangas (My Take on Ww Recipe) |

While the WW recipe was good, I wanted to change it just a bit to suite my own preferences. Here's what I came up with. Ingredients:
1/2 lb ground turkey breast |
1 onion, finely chopped |
1 garlic clove, minced |
2 teaspoons chili powder |
1 teaspoon dried oregano |
1/2 teaspoon ground cumin |
1 (8 ounce) can tomato sauce |
2 tablespoons diced green chilies |
1/3 cup fat free cheese (your choice) |
4 (8 inch) whole wheat tortillas |
Directions:
1. Preheat oven to 400 degrees F. 2. Spray a baking sheet with nonstick spray. 3. Spray a skillet with nonstick spray; set over medium-high heat. 4. Add the turkey, onion, garlic, chili powder, oregano, and cumin and cook until the turkey is done. 5. Add the tomato sauce and the chiles; bring to a boil. 6. Reduce the heat and simmer, uncovered, until the flavors are blended and the mixture thickens, 5 minutes or so. 7. Remove from the heat and stir in 1/2 the cheddar cheese. 8. Wrap the tortillas in foil and place in the oven to warm for 10 minutes. 9. Spoon about 1/2 cup of the filling into the center of each tortilla. 10. Fold in the sides, then roll to enclose the filling. 11. Place the chimichangas, seam-side down, on the baking sheet. 12. Sprinkle the other 1/2 of the cheese on top. 13. Bake until golden, 15 minutes or so. Enjoy! |
