I saw this recipe on an episode of Sam the Cooking Guy. I modified it for my family and we liked the modified version so much I thought I'd post it here! I use one of those rotisserie chickens from the grocery store for this. Ingredients:
4 cups cooked chicken, shredded |
1/2 white onion, chopped |
3 garlic cloves, minced |
1 (4 ounce) can diced green chilies |
1 cup diced tomato |
1 (10 ounce) can enchilada sauce |
1 (10 ounce) can black beans |
1 cup shredded cheddar cheese |
1/4 cup chopped cilantro |
6 flour tortillas, burrito size |
sour cream |
Directions:
1. Heat oven to 400. 2. Saute onions in a little oil in a skillet. 3. When softened, add garlic and cook for about a minute. 4. Add chicken, tomatoes, black beans, and green chiles. 5. Heat tortillas to make them pliable. 6. Turn off heat, add cheese and cilantro. 7. Spoon 1/6 mixture on each tortilla and roll up. 8. Place on a greased pan and rub top of burrito lightly with oil. 9. Bake until golden, about 20 minutes. 10. In a separate pan, heat the enchilada sauce. 11. Spoon warm enchilada sauce on a plate, lay chimichito on top, add some enchilada sauce and top with a spoonful of sour cream. |
