Feel free to adjust the seasoning amounts. This was thrown together in a hurry, but I liked it enough to make it again. Great when served with a nice crusty bread or salad. Ingredients:
1 (15 ounce) can black beans, mostly drained |
1 (15 ounce) can crushed tomatoes |
1/2 lb lean ground beef |
2 carrots, peeled and roughly chopped |
1 bouillon cube |
1/2 cup frozen corn |
1 teaspoon soy sauce |
1 teaspoon cumin |
1 teaspoon coriander |
1/2-1 cup cooked brown rice |
Directions:
1. Brown ground beef in a medium size pot and drain. 2. Add remaining ingredients and let simmer until the carrots are tender, about 20-25 minutes. |
