Feel free to adjust the seasoning amounts. This was thrown together in a hurry, but I liked it enough to make it again. Great when served with a nice crusty bread or salad.
Ingredients:
1 (15 ounce) can black beans, mostly drained
1 (15 ounce) can crushed tomatoes
1/2 lb lean ground beef
2 carrots, peeled and roughly chopped
1 bouillon cube
1/2 cup frozen corn
1 teaspoon soy sauce
1 teaspoon cumin
1 teaspoon coriander
1/2-1 cup cooked brown rice
Directions:
1. Brown ground beef in a medium size pot and drain.
2. Add remaining ingredients and let simmer until the carrots are tender, about 20-25 minutes.
