4 cups dry white wine |
16 doz mussels |
1/2 cup extra virgin olive oil |
3 cloves garlic crushed |
6oz anchovy fillets chopped |
1 tsp red chilli flakes |
4 tblsp white win vinager |
13/4 cup minced parsly |
Directions:
1. In a large pot bring the wine to a simmer.Add the mussels remove each one when opened, remove from shells and set aside.In a saute pan, heat olive oil add garlic cook gently for about 2 mins,add anchovies and chilli flakes and tose over heat for about 2 mins. add mussel meat, reduce to a simmer for about 2 mins. remove and allow to cool. place all in a large boel cover and refridg overnight add parsley and toss serve |
