This is a nice flavoured cordial with a bite. The recipe was by Jackie French, although there are others which are similar as it is a simple recipe. You can vary the heat by varying the number of chillies used. I have quite a few chilli plants so I am always looking for ways to use them up. Ingredients:
5 very hot chilies, quartered, seeds in (birdseye, firecracker) |
3 cups water |
1/2 cup lemon juice |
2 cups sugar |
2 teaspoons tartaric |
Directions:
1. Add water to a saucepan and simmer chillies for 15-20mins. 2. Strain and put water back into saucepan. 3. Add sugar and boil for 5 minutes. 4. Add remaining ingredients and bring to the boil. 5. Bottle and keep in a cool place. 6. Throw out if it looks or smells odd. |
