I love fresh corn done on the BBQ. The prep time includes soaking time.
Ingredients:
12 cobs of corn, unhusked
1/3c chilli corn butter
chilli corn butter
1/3c soft butter
11/2t cumin
11/2t chilli powder
2 garlic cloves, minced
Directions:
1. Soak corn in water at least 20 minutes.
2. Peel back husks leaving bases attached; remove silk.
3. Spread about 1 tsp of butter over each cob; close husks and tie with wet kitchen string.
4. Grill over med-high heat ; close cover and cook turning frequently, about 20 mins or until tender.
5. CHILLI CORN BUTTER
6. Mix all ingredients together until well blended and smooth.
