Ingredients:
2 cups unsweetened pineapple juice |
1 (12-ounce) can papaya nectar |
1 1/2 cups cubed fresh pineapple |
1 1/2 cups cubed cantaloupe |
2 tablespoons sugar |
1/2 teaspoon ground ginger |
1 large banana, sliced and divided |
fresh mint sprigs (optional) |
Directions:
1. Combine first 6 ingredients in a large bowl, stirring well. Place half of fruit mixture and half of banana in container of an electric blender; cover and process on low speed until smooth. Transfer pureed mixture to a large bowl. Repeat procedure with remaining fruit mixture and banana. 2. Cover and chill at least 4 hours or up to 2 days. To serve, stir chilled soup, then ladle into individual bowls. Garnish with mint sprigs, if desired. |
