This was a perfect appetizer for Thanksgiving as it didn't require any cooking and I made it 2 days before hand.....I served it in a sourdough loaf with cubes of bread to dip with. Even the picky eaters raved about it. Read more . The photo is of what was left that we enjoyed a day or so later. Ingredients:
1 10 oz.. box of frozen chopped spinach, thawed and completely drained of any liquid |
1 cup sour cream |
1 cup mayonnaise |
6 scallions, chopped |
1 8 oz. can water chestnuts, chopped |
2 cloves garlic, finely chopped |
1/2 cup parsley, chopped |
2 tbls. lemon juice |
1 tsp. pepper |
salt to taste |
