Combine your favorite rice with sliced green onions, chopped green peppers, almonds and parsley. Add a little rice wine vinegar vinaigrette and toss. This is a versatile and delicious side dish that you can make ahead...and it tastes delicious with just absolutely anything! Ingredients:
1 1/2 cups cooked rice, chilled (white, brown or wild) |
2 green onions, thinly sliced |
1/2 green bell pepper, finely chopped |
1/4 cup almonds, finely chopped |
2 tablespoons fresh parsley, chopped |
1/3 cup crisco vegetable oil |
2 tablespoons rice vinegar |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Combine rice, green onions, green peppers, almonds and parsley in medium serving bowl. 2. Blend oil, rice vinegar, salt and pepper in small mixing bowl. Pour over rice mixture. Toss to coat. Cover and refrigerate at least 2 hours. Stir and add salt and pepper to taste. |
