Chilled Peaches N' Cream Salad |

Scoops of ice cream blend with chunky peaches in a chilled, refreshing gelatin salad. Land-O-Lakes Cookbook. Ingredients:
6 ounces peach flavor gelatin |
1 cup boiling water |
1 cup cold water |
2 cups vanilla ice cream, softened |
1 pinch nutmeg |
1 lb fresh peaches (reserve 1/2 fresh peach or 6 peach slices) or 1 lb frozen peaches, sliced into 1/2-inch pieces (reserve 1/2 fresh peach or 6 peach slices) |

Directions:
1. in a large bowl dissolve gelatin in boiling water, stir in cold water, ice cream and nutmeg. 2. whisk until ice cream is melted. 3. refrigerate until slightly thickened (about 30 min). 4. whisk mixture until smooth, fold in peaches. 5. pour into greased 6 cup mold. 6. refrigerate until firm, 6 hours or overnight. 7. unmold onto lettuce leaves, garnish with reserved peach slices. |
