Easy to make. Preparation time does not include chilling. Ingredients:
8 ounces fresh mushrooms, cleaned and sliced |
2 tablespoons olive oil |
3 tablespoons lemon juice |
1/4 teaspoon tarragon |
1/4 teaspoon granulated sugar |
1/4 teaspoon kosher salt |
parsley (to garnish) (optional) |
Directions:
1. Mix ingredients for the vinaigrette in a small bowl 2. In a large bowl, toss mushroom slices with vinaigrette. 3. If you want you can garnish with a little parsley. 4. Chill before serving. |
