A light, cool chilled soup that is a great starter coarse for brunch or lunch. From Maxwell's, Stowe, VT. Ingredients:
6 cups chopped cantaloupe |
1 1/2 cups fresh orange juice |
1/4 cup fresh lemon juice |
1/4 cup fresh lime juice |
1 tablespoon honey |
1/2 teaspoon ground cinnamon |
Directions:
1. Combine all ingredients in a large mixing bowl. 2. Place half of the fruit mixture into the container of an electric blender; process until smooth; pour puree into a large bowl. 3. Repeat with the remainder of the fruit mixture. 4. Add more cinnamon and honey to taste. 5. Chill for several hours before serving. |
