Ingredients:
4 cucumbers, peeled, seeded, and chopped (about 3 lb.) |
3 cups buttermilk |
1 (8-oz.) carton plain yogurt |
2 green onions, chopped |
1/4 cup chopped fresh parsley |
3 tablespoons fresh lemon juice |
2 tablespoons chopped fresh dill |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
Directions:
1. Process all ingredients, in batches, in a food processor until smooth, stopping to scrape down sides as needed. Transfer to a serving bowl; cover and chill 2 hours. |
