For a light soup that's big on flavor, try Chilled Cucumber Soup. It's a refreshing meal for those hot summer days. Ingredients:
4 cucumbers, peeled, seeded, cut into small chunks |
4 cups plain yogurt (not nonfat) |
2 teaspoons curry powder |
1 teaspoon salt |
1 clove garlic, minced |
1/2 cup chopped fresh mint |
6 scallions, white and light-green parts, chopped |
Directions:
1. Put all ingredients in blender or food processor and blend until smooth. Season with additional salt, if desired. Cover and chill 2 hours to allow flavors to blend. |
