Ingredients:
4 cucumbers, peeled, seeded, cut into small chunks
4 cups plain yogurt (not nonfat)
2 teaspoons curry powder
1 teaspoon salt
1 clove garlic, minced
1/2 cup chopped fresh mint
6 scallions, white and light-green parts, chopped
Directions:
1. Put all ingredients in blender or food processor and blend until smooth. Season with additional salt, if desired. Cover and chill 2 hours to allow flavors to blend.
