It surprised me a bit that chilled soups appeared as appys on every dinner menu of our recent cruise, but this could not be easier to fix-in-a-flash soup was a bigger surprise than most. From *The Carnival Experience* by Peter Leypold (Exec Chef of Carnival Cruise Lines), this soup allows you to indulge yourself w/a dessert cocktail both before & after your meal. *Enjoy* !
Ingredients:
3 cups vanilla ice cream
1 cup sparkling wine
1 cup whipping cream
1/4 cup creme de cassis
1/2 teaspoon gingerroot (finely grated)
3/4 cup fresh red currant (to garnish)
6 sprigs fresh mint (to garnish)
Directions:
1. Place ice cream, wine, cream, liqueur & gingerroot in a blender container. Blend on high till smooth.
2. Divide soup into 6 soup bowls, garnish ea w/2 tbsp of red currants + a mint sprig & serve immediately.
