Keeps well in the fridge, for a couple of days. Extremely easy.
Ingredients:
1 (12 ounce) can whole kernel corn, drained
1 small onion, chopped
1/2 cup chopped green pepper
2 tablespoons minced fresh parsley
2 tablespoons cider vinegar
1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Combine all ingredients. Cover and chill at least 4 hours.
