CHILLED CHEESE FINGERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Donovan Estate in Fate Texas in 1991. Ingredients:
nonstick cooking spray |
1/3 cup chicken broth |
1 envelope unflavored gelatin |
2 cups ricotta cheese |
1/2 cup grated parmesan cheese |
2 ounces cream cheese softened |
1/3 cup plain yogurt |
3 tablespoons minced fresh basil |
1/4 teaspoon freshly ground black pepper |
1/8 teaspoon salt |
Directions:
1. Lightly coat a glass square baking dish with cooking spray and set aside. 2. Pour chicken broth into a small heavy saucepan. 3. Sprinkle gelatin over it and let soften 5 minutes. 4. Set over very low heat and stir until gelatin dissolves about 5 minutes. 5. Remove from heat and set aside. 6. In large bowl of electric mixer beat ricotta, parmesan and cream cheese until smooth. 7. Beat in yogurt, basil, pepper and salt then stir in gelatin. 8. Pour mixture into pan then cover and refrigerate at least 3 hours or until set. 9. To serve run a thin metal spatula around edges of cheese mixture and invert onto a large platter. 10. Cut into 8 strips one way then into 6 strips the opposite way to form 48 fingers. |
