Chilled Avocado Lime Soup With Shrimp and Chiles |

Smooth Ingredients:
2 lbs avocados, ripe |
1 jalapeno, seeded and minced |
1/4 teaspoon crushed red pepper flakes |
1/3 cup lime juice |
3 cups chicken broth |
1 cup cream |
1 teaspoon salt |
3/4 teaspoon black pepper |
1 1/2 teaspoons cilantro, fresh, coarsely chopped (more for garnish) |
10 shrimp, medium cooked, peeled, deveined and halved horizontally |
1 tablespoon olive oil |
Directions:
1. Combine avocado, 3/4 of lime juice, jalapeno, red pepper flakes and 1/3 of chicken broth in food processor and process until smooth. 2. Transfer to large bowl and whisk in remaining chicken broth, cream, 3/4 of salt, 2/3 of pepper and chopped cilantro. 3. Chill. 4. Combine shrimp and remaining salt, remaining pepper and olive oil in a small bowl. Toss with remaining lime juice. Let stand 15 minutes. 5. Ladle soup into bowls and top with 5 shrimp halves and cilantro. |
