Chilled Avacado and Cucumber Soup

This pureed chilled soup is perfect for a hot summers day. It has a creamy texture and smooth finish.
Ingredients:
1/2 cup heavy cream
1 1/4 cups avocados, peeled seeded, 1/4-inch dice
1 cup cucumber, peeled seeded, 1/4-inch dice
1 tablespoon lime juice
8 ounces chicken stock
1 cup plain greek yogurt
1 tablespoon garlic (minced)
4 ounces sour cream
1 tablespoon dill (rough chop)
1 tablespoon parsley (rough chop)
1/2 tablespoon salt
1 teaspoon white pepper
2 ounces whole milk
1 tablespoon mint (rough chop for garnish)
Directions:
1. Puree heavy cream, avacado, cucumber, lime juice, chicken stock, plain yogurt, garlic, sour cream, dill and parlsey to a fine smooth consistency. Whisk in milk until desired consistency. add salt and pepper. refrigerate for 45 mins, serve in chilled bowls and garnish with mint.
