This refreshing salad is a simple mix of seasonal asparagus, thinly sliced radishes and sugar snap peas lightly dressed in a tangy, sweet vinaigrette. My MIL said this about it: This was, how shall I say? Read more Crunchy heaven? :-) Ingredients:
1 pound asparagus |
1 pound sugar snap peas |
4 easter radishes, thinly sliced |
champagne vinaigrette |
1 shallot, peeled and thinly sliced |
2 tablespoons smooth dijon mustard |
fresh juice of one lemon |
2 tablespoons champagne vinegar |
1/4 cup olive oil |
fine sugar, sea salt and freshly ground black pepper to taste |
Directions:
1. Make vinaigrette: Place 4 first ingredients in bowl then slowly whisk in oil. Season to taste. 2. Bring a pot of salted water to a boil and blanch the asparagus and sugar snap peas. Quickly drain and transfer to an ice bath. Remove, pat dry and place in serving bowl along with radishes. Lightly drizzle with vinaigrette and chill for at least an hour. |
