This is a delicious casserole that can be served for brunch,lunch or dinner Ingredients:
4 egg whites |
1/3 c flour |
1 c evaporated milk |
16 oz shredded mexican blend cheese |
3 cans whole green chilies |
1 8 oz can enchilada sauce |
Directions:
1. Heat oven to 350F 2. Spray a 2 quart casserole dish with non stick spray 3. In medium bowl combine egg whites, milk and flour, beat until well blended 4. Place 1/2 the green chilies in the baking dish 5. Cover with 1/2 of the egg mixture 6. Spread 1/3 of the cheese on top 7. Repeat layers Reserving last 1/3 cheese for top 8. Pour sauce on top of casserole 9. Bake at 350F for 25-30 minutes 10. Sprinkle with remaining cheese 11. Bake an additional 5 minutes until cheese is bubbly |
