1 lb lean ground beef |
3 cups tomato juice |
1 (15 ounce) can chunky tomato sauce |
1 (15 ounce) can red kidney beans |
2 cups chopped celery |
2 cups sliced onions |
2 cups butternut squash, cut in 1-inch pieces |
1 cup sliced red bell pepper |
1 cup sliced zucchini |
1 cup sliced mushrooms |
1/2 jalapeno chili, finely chopped |
2 garlic cloves, minced |
1 1/2 teaspoons chili powder |
1 1/2 teaspoons ground cumin |
salt and pepper |
6 lime wedges |
Directions:
1. Cook ground beef in large skillet over medium heat until browned, about 8 minutes, crumbling with a fork. 2. Combine beef and remaining ingredients, except salt, pepper and lime wedges, in a slow cooker. 3. Cover and cook 6-8 hours. 4. Season to taste with salt and pepper. Serve with lime wedges. |
