This is a great side dish! We've had it as a meal in itself before. Picked it up through family years ago in Louisiana. Very simple and very tasty! Ingredients:
4 cups yellow squash diced |
3-4 tabls. bacon grease (or olive oil) |
1 medium onion diced |
1 can chopped green chilis |
1/2 lb velveeta cheese cubed |
Directions:
1. Saute' onion in large skillet in bacon grease until transparent. 2. Add squash and stir, cooking over medium heat until squash is tender stirring often to prevent scorching. Squash and onions will brown lightly. 3. Add green chilis and velveeta and stir until melting. |
