A vegetarian chili - simmer beans for two hours or soak them overnight. Ingredients:
2 cups dry red kidney beans |
5 cups water |
2 yellow onions |
1 green pepper |
2 stalks celery |
2 cloves garlic |
1 cup tomato sauce |
2 cups tomatoes (stewed) |
4 tbsp chili powder |
2 tsp cumin |
1/4 tsp crushed red pepper |
1/8 tsp cayenne |
Directions:
1. Soak beans for 2 hours. Add remaining ingredients and simmer additional two hours. |
